Biochemical assessment of proteolysis of hydrobionts' tissue
Abstract. In the paper the estimation of efficiency for various methods of degree of proteins degradation for the purpose of their further use in technological practice has been presented. The conclusions about the appropriateness of these methods for identifying substandard raw materials have been made.
