Quality features of chitin and chitosan produced from crayfish crust-containing waste
Abstract. The method for producing chitin from crust-containing raw material of crayfish using demineralization of 8 % hydrochloric acid and enzymatic deproteining by protosubtilin GZh 70 units / g has been tested; the output of chitin is 8–9 %. Chitosan (molecular weight 48,7 kDa, deacetylation degree 85 %) soluble in 1 % solution of lactic acid has been produced from high-purity chitin
