Integrated processing of Siberian plant raw materials into functional products

Abstract. The food processing industry needs resource-saving technologies for the integrated processing of Siberian fruit-and-berry and other plant raw materials while preserving biologically valuable components. The paper presents an integrated processing scheme for raw materials typical of Krasnoyarsk Krai, including chokeberry, rosehip, stone bramble, blueberry, bilberry, lingonberry, rowan, hawthorn, small-fruited apples, gooseberry, bird cherry and other species. The technological approach combines mechanical preparation, enzymatic treatment of mash, pressing, filtration and freeze-drying. The use of a multienzyme composition increases juice yield by 15–18 %. The highest juice yield has been obtained from rowan after blanching with hot water at a 1 : 1 hydromodule (82.40 %), with losses of 3.60 %. For juice-based soft drinks made from raspberry and stone bramble juices, the best sensory score has been achieved by the formulation with cedar coniferous extract; the finished drink has acidity of 4.03 ± 0.04 units, soluble solids of 8.60 ± 0.20 %, ascorbic acid of 9.90 ± 0.02 mg%, flavonoids of 98.89 ± 0.10 mg %, and anthocyanins of 5.34 ± 0.10 mg %. The integrated scheme makes it possible to obtain berry juice, juice-based soft drinks with non-traditional chemopreventive additives, anthocyanin colorants, freeze-dried juice powder, and pomace powder for bakery, confectionery, meat and other food formulations.
