Kinetic characteristics of chemical deacetylation of chitin and chitosan

Abstract. The comparison of chemical hydrolysis of chitin and chitosan in acid and alkaline media has been carried out. It has been shown that the presence of the crystal structure in the investigated samples is not a reason of deceleration of the deacetylation process. Two parallel reactions can take place - deacetylation and buildup of slow-acting intermediate which has been destroyed during scour. The constants of velocities of reactions taking place at deacetylation have been calculated.
